To craft The GlenAllachie Wine Cask Series, Master Blender Billy Walker first expertly matured our spirit in the finest American oak ex-Bourbon barrels, before transferring the whisky into hand-selected European wine barriques for secondary aging. Billy added a distinctive twist to this release by ultimately blending four exceptional wine cask finishes into one unique expression: The Cuvée Wine Cask Finish. The next release of GlenAllachie's Cuvée, bottled in 2023, is a harmonious marriage of whisky matured in barriques which previously held premium red wine. This accomplished single malt is truly the apex of luxury. Master Distiller Billy Walker thoughtfully finessed every drop of vintage auburn liquid in superior Pedro Ximénez and Oloroso casks, expertly sourced from Spain. Five Sherry puncheons and hogsheads have been combined to create an exceptional, multifaceted drinking experience abundant in notes of fruitcake, warming mocha and ripe cherries. We proudly present The GlenAllachie 21-year-old Batch 5 with integrity; at its cask strength of 49.2%, without added colouring or chill filtration, allowing the exceptional liquid within the bottle to speak for itself.

GlenAllachie 8Y Scottish Virgin Oak

This golden malt obtains its indulgently sweet characteristics from maturation in casks crafted from Sessile Oak, which grows in forests along the Atlantic coast of Scotland. Seldomly used for whisky maturation, Scottish Oak is not only rare and costly but is incredibly challenging to work with at all stages of production; growing, milling and coopering. Prior to hosting our honeyed whisky, the wood was air dried for 36 months before being toasted and charred to a medium level to encourage optimum interaction between oak and spirit. Despite presenting difficulties, this desirable oak imparts luxurious notes of blonde chocolate, with hints of zesty orange and smooth toffee to offer a truly unique drinking experience.

GlenAllachie 9 Y Rye Finish

This gorgeous golden malt has been bottled at 48% and matured in premium American Oak Wood Barrels before being re-racked into bold and punchy Kentucky Rye Casks. The different toasting and charring levels of these casks combined with the Rye maturation adds a rich and spicy twist to the classic GlenAllachie style. GlenAllachie 9Y - Amontillado Sherry Cask Finish

Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. We proudly present The Wood Collection at a high strength of 48% ABV, natural colour and non-chill filtered, allowing each unique spirit to speak for itself.

GlenAllachie 9Y - Oloroso Sherry Cask Finish

Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. GlenAllachie 9Y Douro Valley - Wine Cask Finish

Specially selected by Billy Walker, Limited Release (2,000 cases), Matured in ex-Bourbon barrels withsecondary maturation in Douro Valleybarriques, Matured in Speyside, Non-chill filtered and no added colouring.Located in the heart of Portugal, the Douro Valley is one of the world’s oldest protected wine regions, established in 1756. With the country’s highest wine classification as a Denominação de Origem Controlada (DOC), this historic region is a significant producer of robust, characterful red wines.Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit.
