Created from a combination of Pedro Ximénez and Oloroso sherry puncheons along with a small quantity of Virgin Oak casks and red wine barriques, the resulting bronze spirit delivers sherry-matured sophistication.

This gorgeous golden malt has been bottled at 48% and matured in premium American Oak Wood Barrels before being re-racked into bold and punchy Kentucky Rye Casks. The different toasting and charring levels of these casks combined with the Rye maturation adds a rich and spicy twist to the classic GlenAllachie style. Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. Specially selected by Billy Walker, Limited Release (2,000 cases), Matured in ex-Bourbon barrels withsecondary maturation in Douro Valleybarriques, Matured in Speyside, Non-chill filtered and no added colouring.Located in the heart of Portugal, the Douro Valley is one of the world’s oldest protected wine regions, established in 1756. With the country’s highest wine classification as a Denominação de Origem Controlada (DOC), this historic region is a significant producer of robust, characterful red wines.Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit.

The Meikle Tòir – The Chinquapin One is a peated single malt, carefully crafted and refined in virgin Chinquapin oak casks sourced from the Northern Ozarks, USA. This whisky delivers notes of soft spices and roasted nuts, harmoniously combined with a gentler peaty smoke, derived from the St. Fergus mainland peat. With an extended fermentation of 160 hours and a smoke profile measured at 35 PPM, this single malt reveals a complexity that perfectly complements maturation in virgin oak casks.

The GlenAllachie Single Cask #2930 is a unique whisky that has aged for 11 years in a Moscatel Hogshead cask.

This rare and unique Single Cask, drawn from cask #803475, comes from an Oloroso Puncheon and was aged for 10 years in the GlenAllachie distillery warehouses. Each cask is monitored with meticulous attention to capture and enhance the essence of its contents at the time of bottling. Uncolored and non-chill filtered, this whisky thus preserves all its authenticity and natural complexity. This cask strength whisky at 62.2% ABV reveals the perfect marriage between the Sherry-soaked Spanish oak and the distillate. This type of whisky, bottled directly from the cask, offers a raw intensity and a richness of aromas and flavors that only undiluted spirits can reveal.

The White Heather 15 years is a blend crafted by Billy Walker. This whisky brings together a meticulous combination of malt and grain whiskies from the Highlands, Islay, and Speyside regions. Following an initial long aging in American and Spanish oak casks, it underwent additional maturation in Pedro Ximenez Puncheon casks, new virgin American oak barrels, and ex-Oloroso Sherry puncheons, imparting unparalleled complexity and depth to this blend.

White Heather 21 years is an exceptional blended Scotch whisky, crafted under the direction of Billy Walker, a true industry legend with over 50 years of expertise in whisky creation and blending. This limited edition pays tribute to the White Heather brand, passionately and meticulously revived in 2021. This premium whisky results from a rigorous selection of the finest single malts from the Speyside, Highlands, and Islay regions, combined with carefully chosen grain whiskies. With a meticulous aging process, it includes an initial maturation of 18 years in American oak and sherry casks, followed by a second maturation of three years in Pedro Ximénez, Oloroso, and Appalachian virgin oak casks.
