Glendalough Double Barrel

Glendalough's Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside. Glendalough choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging. These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.

Glendalough Pot Still Irish Oak Irish Whiskey

There is no more Irish whiskey than Pot Still; thus, Glendalough Distillery feels it is fitting to age it in Irish Oak. Glendalough Distillery is proud to play its part in bringing back the use of Irish oak for whiskey cask-making. This most quintessentially Irish style of whiskey, pot still, is first matured in ex-bourbon casks, then in Irish Oak felled in the mountains around the distillery.

Glendalough Rose Gin

This fresh, rose-petal gin was first made to honour Glendalough's Head Distiller Ciaran “Rowdy” Rooney's mother Rose, at his little brother's wedding. Carefully-tended flowers from her rose garden are vapor distilled with wild roses and plants from the mountains around the distillery to make this an intensely floral gin. After distilling, the gin is then further infused with even more roses to deepen the flavours and give it its lovely pink hue.

Glendalough Wild Botanical Gin

To make this extraordinary gin, Glendalough forage wild botanicals in the Wicklow mountains all year round. Geraldine Kavanagh, our full time forager, brings the wild, fresh botanicals to the distillery within hours of foraging where small-batch slow-distillation is used to tease out the delicate botanical flavours. Glendalough Wild Botanical Irish Gin serves the taste of 'a year in every bottle' and perfectly captures a place in time, with four seasons of foraging in wild Wicklow encapsulated in each bottle.
