Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. GlenAllachie 9Y - Oloroso Sherry Cask Finish
Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. GlenAllachie Oloroso Puncheon 10 Y - 2014 803475
This rare and unique Single Cask, drawn from cask #803475, comes from an Oloroso Puncheon and was aged for 10 years in the GlenAllachie distillery warehouses. Each cask is monitored with meticulous attention to capture and enhance the essence of its contents at the time of bottling. Uncolored and non-chill filtered, this whisky thus preserves all its authenticity and natural complexity. This cask strength whisky at 62.2% ABV reveals the perfect marriage between the Sherry-soaked Spanish oak and the distillate. This type of whisky, bottled directly from the cask, offers a raw intensity and a richness of aromas and flavors that only undiluted spirits can reveal.

Glencadam 2004 Cask 179 Premium Spirits
A genius whisky expression as we like to see and especially taste. The Glencadam Single Cask Whisky matured only on Cask 179 and could not be bottled pure. After maturing on a single cask not cooled filtered into the bottle without any coloring or dilution. Something that will really make the true bourbon lover water teeth. An incredibly fine dram with a divine taste. This Highland Glencadam was personally selected by Premium Spirits and released in a numbered edition. The cask was personally selected on site after a thorough analysis.
