Tasting notes
Colour
Transparent liquid, dark amber in colour, shiny and sparkling, lightfast, with no particles in suspension.
Aroma
Aroma typical of an aged rum matured in oak casks, correct balance between its components, slightly sweet, reminiscent of the smell of prunes and sultanas, with well-balanced aromas without the very pronounced smell of oak wood or ethyl alcohol.
Flavour
Distinctive ageing, good evolution, slightly noticeable sweetness blended with a well-processed wood aroma, with notes of vanilla and sweet dried almonds.
Mouthfeel
Medium viscosity on the palate, it coats the entire palate leaving a slight tingling sensation, balanced with a sweet bitter note but not irritating, sensation of warmth in the throat, typical of its alcohol content. |

This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.
Issuing from a meticulous selection of Caribbean rums, Gun’s Bell is blended in our cellars in Chevanceaux following a traditional artisanal method. It then undergoes a 4 to 6-month aging process in oak barrels (depending on the weather) to develop woody notes, vanilla, dried nuts, roasted almonds, and smoky accents. Gun’s Bell reveals powerful and indulgent aromas, releasing an incomparable flow of flavors with both fruity and smoky notes.
Don Papa Gayuma, meaning “love potion” in Tagalog, is a unique cuvée that pays tribute to the traditions of the shamans of Negros Island, Philippines. This super-premium rum, crafted with care, combines artisanal expertise with a rich history of rituals and legends. This rum is the result of an exceptional aging and finishing process. Aged for 3 years in American oak ex-Bourbon barrels, then refined for 6 months in Rioja barrels toasted at high temperatures and an additional 3 months in intensely charred Islay whisky oak barrels, this rum reveals a complexity that surprises and delights. With its peated notes (a first in the Don Papa universe) and its rich, indulgent bouquet, it invites discerning connoisseurs to a unique and intriguing experience.
The Tomatin 12 Year Old is smooth and silky, having been matured in traditional Scotch Whisky, ex-Bourbon and ex-Spanish Sherry casks. A rich, fruity aroma is the prelude to sweet flavours of ripe apples, pears and a subtle hint of nut before the long, pleasantly oily finish.
Simple and delicious, this preparation blends the fruity and acidic aromas of passion fruit with the floral notes of hibiscus in a perfect balance. A real favourite!
Many years ago, they filled new make Finlaggan into Rioja Red Wine Hogsheads. Coming from the Rioja region within the Basque country of Spain, these Hogsheads have given the signature heavily peated Finlaggan an extra layer of rich mouth coating red berried fruit flavours. The result is a truly mouthwatering sweet and smoky dram to savour. The extrac-tion from the oak casks has given this whisky a beautifully rich natural coppery rose gold colour.
