Sauternes is made from grapes which have undergone ‘noble rot’, causing their moisture to evaporate, hence concentrating the sugars. Mermaid Zest Gin is an aromatic, tangy infusion of Mermaid Gin with summer citrus and wild coastal forages. Cascading grapefruit and hops are blended with island bergamot, lemon zest and rosemary, 'the dew of the sea', then distilled and infused with the signature gin. The result is a zesty, fresh spirit with a hint of sea air.

In order to create this attractive presentation, the carafe is suspended in the spring from the branches of the apple tree as soon as the first little apples appear. The apple then grows inside the carafe. When the fruit becomes ripe, the carafe is removed from the tree with its apple held captive inside it.
