There is no more Irish whiskey than Pot Still; thus, Glendalough Distillery feels it is fitting to age it in Irish Oak. Glendalough Distillery is proud to play its part in bringing back the use of Irish oak for whiskey cask-making. This most quintessentially Irish style of whiskey, pot still, is first matured in ex-bourbon casks, then in Irish Oak felled in the mountains around the distillery.
TASTIN NOTES
Nose: Pungent peaty smoke. Phenolic with a little coastal breeze.
Palate: Lovely sweet peatiness. Some iodine and sea salt balance with vanilla notes and some spice
Finish: Waves of smoke. Fantastic length.
Don Papa Baroko rum is distilled from locally produced molasses, on the island of Negros. It is then aged for several years in American oak barrels, then blended by the cellar master to ensure consistency over the years. to ensure consistency over the years.

The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. Compagnie des Indes Latino comes from a blend of rums essentially of "Spanish" type (60% comes from Guatemala) but not only, since a part of the rum which composes it comes from Guyana (English influence).The Spanish type brings the greediness while the English influence brings a touch of freshness. 5 years of aging in new barrels (bourbon) have allowed this rum to acquire its roundness and a rich palette of aromas. The rum was bottled without cold filtration.
