

Compagnie des Indes Latino comes from a blend of rums essentially of "Spanish" type (60% comes from Guatemala) but not only, since a part of the rum which composes it comes from Guyana (English influence).The Spanish type brings the greediness while the English influence brings a touch of freshness. 5 years of aging in new barrels (bourbon) have allowed this rum to acquire its roundness and a rich palette of aromas. The rum was bottled without cold filtration.
Made from a blend of Central American rums with a very strong Latin dominance (60% Guatemalan rums), and a touch of Guyanese rums (Trinidad and Tobago and Barbados), this blend brings out the characteristics of Latin American rums, with those round and greedy notes.

NOSE Fresh and elegant, with notes of almond and marzipan.
PALATE Soft and subtle, with licorice, pineapple and candied tropical fruits.

At the heart of every bottle of Cihuatán Xaman lies the Sleeping Woman, a Mayan goddess and guardian of the Cihuatán valley. Legend has it that, under the veil of the night, the Sleeping Woman would search for the brightest star in the sky. It was Xaman, the god of the North Star.
Compagnie des Indes West Indies is a blend of rums of English and Spanish tradition: rums from Barbados, Guyana, Dominican Republic and Panama.
For Barbados it is a pot still distillation, while for the other 3 origins it is a column still. The rum is aged in American oak barrels for at least 8 years.
Matured for 18 years, this is indulgent and spicy thanks to the casks selected for maturation.
The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.
Aging: Two years minimum. In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new.
