This late-night expression is rich and autumnal, developed and amplified to unexpected heights, while staying perfectly balanced and closely tied to the bright and fruity character of the Distillery.

For their Merlet VSOP Cognac, Gilles and his sons selected and blended eaux-de-vie from different regions of the cognac appellation, to ensure consistent quality. The eaux-de-vie were aged for at least four years. Most of the Cognacs selected for this blend are from Fins Bois ‘crus’, famed for their fruitiness and their capacity to mature fast when barrel-aged.

Handcrafted on the Isle of Wight since 2014 using ten ethically sourced botanicals, Mermaid Gin offers a smooth yet complex blend of fresh organic lemon zest and peppery grains of paradise, with a hint of sea air from fragrant, wild rock samphire. HSE invites you to taste the aged version of its 1st parcel rum 2016. Aged for over 3 years in 200-litre American white oak casks, this rum will delight you with its elegance, finesse and complexity.

To extract all the delicate aromas from elderflower blossoms, the production of Merlet's Efferlet follows a precise process. First, the flowers are infused in hot water; once the tisane is cooled, it is stabilized with fine alcohol. This is followed by blending with fruit infusions (pear and lychee macerated in fine alcohol).

An outstanding 8 year old single malt Scotch whisky. Crafted with singular distillation processes, imparting a unique characterful avour and complex body. Aged for 8 years in ex-bourbon barrels gaining a sweet and creamy texture. The depth and complexity of this single malt Scotch is then complemented by no fewer than 3 additional months of extra maturation in custom made Oloroso sherry cask octaves.The hefty sherry cask-influence provides vibrant aromas and flavours, marks of its unsubdued character, ensuring a remarkable intricate experience of itensity and depth.
