Palo Cortado is the rarest style of Sherry that combines the dryness of Fino with the nutty and darker fruit characteristics of Oloroso. It develops when the ‘flor’ yeast layer naturally dies on a wine that was initially intended to become a Fino. Using puncheons and hogshead casks that previously held this exceptional Sherry, the spirit develops a beautifully layered character, with notes of ripe plums, dark mocha and warming cinnamon spice. We proudly present The Wood Collection at a high strength of 48% ABV, natural colour and non-chill filtered, allowing ethe unique character to shine through.

TASTING NOTES

COLOUR: Brilliant amber, with golden highlights.

NOSE: Aromas of malt and sweet nectar, enhanced by nuances of oak and vanilla.

PALATE: Rich and balanced, blending nutty sweetness, cinnamon spices, and a slight creaminess.

FINISH: Long and soothing, with honeyed notes and a subtle smoky touch.
