GlenAllachie 9-Year-Old Amontillado Sherry Cask Finish is a Scottish single malt that embodies the art of aging in exceptional casks. Initially matured under the influence of Fino, this Amontillado is distinguished by a second maturation without the presence of the "flor" yeast layer, characteristic of oxidative aging. This unique process enriches the whisky with deep amber hues and intensely complex flavors. Using hogsheads that previously held this aged sherry, this single malt reveals a rich and nuanced aromatic profile. With notes of black cherries, roasted hazelnuts, and caramel sauce, this limited edition is part of "The Wood Collection," a series that highlights the interaction between wood and whisky.
TASTING NOTES :
NOSE: A delicate explosion of ripe orchard fruits, with notes of cinnamon and heather honey. The bouquet evolves into aromas of butterscotch, roasted hazelnuts, and a hint of dark tobacco.
PALATE: Rich and textured, revealing flavors of honeycomb, maraschino cherries, and dried apricots. The complexity continues with nuances of poached pears, blood orange, and a crunchy mix of assorted nuts, all highlighted by a subtle touch of cinnamon.
FINISH: Persistent and elegant, with echoes of dried fruits, roasted hazelnuts, and a hint of salted caramel that fades slowly, leaving a gentle spicy warmth.
