The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.
Aging: Two years minimum. In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new.

The secret of its freshness lies at the heart of the French gin, in fennel, caraway, dill and angelica seeds. In a discreetly bitter orange that melts into the dry vermouth.

Mermaid Zest Gin is an aromatic and tangy infusion of Mermaid Gin with summer citrus and wild foraged coastal plants. Grapefruit and cascade hops are blended with island bergamot, lemon zest and rosemary, "the dew of the sea", then distilled and infused with the signature gin. The result is a zesty and fresh spirit with a hint of sea air. Mermaid Zest Gin won a Double Gold Medal as well as the Best in Class award in the flavoured gins category at the San Francisco World Spirits Competition 2025 (SFWSC)

The Tullibardine Sovereign is a Scottish single malt crafted in the Highlands region, renowned for its expertise and the purity of its water. Aged in first-fill bourbon casks, this whisky reveals an aromatic richness combining sweetness and complexity. Following on from the multi-award-winning success of our Brecon Special Reserve Gin and our Brecon Botanicals Gin, Penderyn are delighted to announce the launch of Rhubarb & Cranberry gin. It is based on our Brecon Special Reserve gin (which won Gold at the 2020 Spirits Business Global Gin Masters) and bottled at 37.5% abv.

Aged in 1st-fill ex-bourbon casks, then for a time in 500-litre Spanish Sherry casks, which give it its hazelnut-brown color.

Our malt is crafted slowly and is matured at the distillery in traditional dunnage warehouses on earthen floors. We're proud of our heritage and have used traditional methods since we rolled our first barrels back in 1790. And yet we're not afraid to tinker with tradition if it serves to improve our product. Our single malt is the perfect mix of nature and nurture and we believe in quality above all else.

This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.
