Koval Wheat is a limited release American whiskey produced in small batches with a 100% organic wheat mashed potato bill. This expression pays homage to the tradition of American wheat whiskey, while differentiating itself from the rest of the Koval line due to the high alcohol content. It is aged in small new and charred casks and bottled at 55% vol. without chill filtration. The water - an essential ingredient in the distillation process - comes from Lake Michigan and is purified using natural charcoal. To make this extraordinary gin, Glendalough forage wild botanicals in the Wicklow mountains all year round. Geraldine Kavanagh, our full time forager, brings the wild, fresh botanicals to the distillery within hours of foraging where small-batch slow-distillation is used to tease out the delicate botanical flavours. Glendalough Wild Botanical Irish Gin serves the taste of 'a year in every bottle' and perfectly captures a place in time, with four seasons of foraging in wild Wicklow encapsulated in each bottle.

A blend of specially selected aged rums, the youngest being no less than 12 years old, it is a combination of the Enmore and Diamond Coffey stills and the Port Mourant double wooden pot still, blended to perfection and aged in old bourbon oak casks.

Botran Solera 18Y is a rum aged at high altitude in the mountains of Guatemala. It is made from a blend of rums aged between 5 and 18 years and has undergone Solera aging. The American oak barrels used for the Solera process are former Sherry and Port casks. Additionally, the aging warehouses are located at an altitude of 2,300 meters, which intensifies the aging process, thereby developing delicate aromas of vanilla, tobacco, and sandalwood.

Calvados 15 ans has aged 15 years in oak barrels. The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.

Issuing from a meticulous selection of Caribbean rums, Gun’s Bell is blended in our cellars in Chevanceaux following a traditional artisanal method. It then undergoes a 4 to 6-month aging process in oak barrels (depending on the weather) to develop woody notes, vanilla, dried nuts, roasted almonds, and smoky accents. Gun’s Bell reveals powerful and indulgent aromas, releasing an incomparable flow of flavors with both fruity and smoky notes.
