To deliver our classically Sherried profile, Billy hand-selected Pedro Ximénez and Oloroso casks to be married with spirit maturing in red wine barriques and medium toast/medium char American virgin oak barrels. The result is a well-balanced, yet complex malt with distinctive notes of dark fruits and layers of warming sweet spice.

His legend was instrumental to the independence of the island during the Revolution of the 1890s. The figure of Don Papa is inspired by Papa Isio, though he is not the same person. Glendalough's Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside. Glendalough choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging. These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.
