This white rum is fermented using a traditional method, making it a unique (re)discovery for aficionados. As a Grand Arôme rum, its production requires extended fermentation, and the secret of Lontan is rooted in the very popular artisan rums produced by 18th-century sugar refineries. Only four distilleries in the world have been able to succeed in performing the subtle alchemy to make such a rum. Characterised by spices and ripe fruit, there is a fine expression here of the aromas found in molasses – or ‘sugar cane honey’ as it is known – which are revealed using traditional methods in a very long, mixed fermentation process, which has been skilfully mastered.

Distilled in 2008 and bottled in 2024, this whisky is limited to only 15,720 bottles worldwide. This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.
Each striving to better the last, Batch 10 is a true illustration of the artistry and expertise that creates every drop of our liquid gold. To deliver our classically Sherried profile, Billy hand-selected Pedro Ximénez and Oloroso casks to be married with spirit maturing in red wine barriques and medium toast/medium char American virgin oak barrels. The result is a well-balanced, yet complex malt with distinctive notes of dark fruits and layers of warming sweet spice.
