We age this Kentucky straight bourbon in new, charred white oak barrels for seven years and bottle it at barrel strength. Seven just became your lucky number.

TASTING NOTES

NOSE: A vibrant bouquet of fresh citrus with delicate floral notes. Juniper, distinctly present, blends with subtle spicy touches and a slight hint of cardamom.

PALATE: The attack is smooth and complex, marked by a slight sweetness balanced by lemon and juniper flavors. Spices, including Saigon cinnamon, bring fine depth with a crisp, zesty kick in the background.

FINISH: Medium in length, the finish is marked by crisp, clean citrus touches, supported by a balanced dryness and light earthy notes, leaving a lingering spicy impression.

The rich honey flavour adds a sweetness to the flavour profile, the wonderful hand-picked calamansi lime contributes distinctive citrus notes while the fiery local pepper, siling labuyo adds a touch of heat and spice.

This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.

Ezra Brooks Rye is an authentic rye whiskey, crafted with American expertise passed down since 1957. Produced at the renowned Lux Row distillery in Bardstown, the bourbon capital of the world, this rye whiskey pays homage to tradition and innovation. Comprising 51% rye, 37% corn, and 12% malted barley, it is carefully aged in freshly charred American white oak barrels, unveiling a rich aromatic profile and complex depth. Maguey tepeztate (or tepextate) is an Agave marmorata. It produces beautiful quiotes at the end of it’s life that flower a rich yellow before turning to seed. Tepeztate takes as many as 25 years to mature in the wild, and sustainability efforts are needed in order to keep mezcal production of this agave in the future. Despite all odds it seems to flourish best on the sides of steep rocky cliffs. In certain areas of Puebla there is a smaller sub-varietal of the Agave marmorata that grows with lateral white stripes across the pencas. These agave can go by the name pichomel, pichorra, or pizorra depending on location.
