Koval Bourbon

The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.
Aging: Two years minimum. In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new.

Don Papa Gayuma, meaning “love potion” in Tagalog, is a unique cuvée that pays tribute to the traditions of the shamans of Negros Island, Philippines. KOVAL Four Grain is distilled from a mash bill of oat, malted barley, rye, and wheat. This whiskey is aged in heavily charred new oak barrels from Minnesota and bottled single barrel at 47%, using state-of-the-art technologies to achieve precise consistency and quality.

The Crème de Pêche de Vigne Merlet is made from this very particular variety, once cultivated along the vineyards, small in size and with red and white flesh.

Martine and Didier craft their vintage Calvados domfrontais. To understand the Appellation d'Origine Contrôlée, Calvados must contain at least 30% pears. In the family business, Calvados consists of about 70% pears and 30% apples. The characteristics of Calvados during tasting: A beautiful freshness with sparkling aromas highlighted. A lively and dry character on the retro-olfaction. It will be followed by notes of spices, caramelized vanillas, honey, and hazelnut. At the end of the mouth, we will notice a long finish with many caudalies. This local product is typical of the Orne bocage, where we are fortunate to use it to transform well-ripened fruits into wonderful eaux-de-vie.
