Using Rye that is locally and sustainably sourced in the Midwestern US, allow us to present a fresh and light whiskey that offers mellow and somewhat sweet notes of maple and candy corn, with a classically spicy finish. Works beautifully in classic cocktails such as a Manhattan, Sazerac, or Scofflaw, where its grain-forward spiciness balances out the sweetness of other ingredients.

The Botran Reserva Blanca is a premium white rum from Guatemala, a country renowned for its centuries-old traditions in crafting exceptional rums. Created by the Botran family, this spirit embodies all the expertise and passion passed down since 1939. Distilled from cane honey (a reduction of fresh cane juice), the Botran Reserva Blanca undergoes a unique aging process in white oak barrels that previously held bourbon, following the Solera method. After this maturation, a charcoal filtration is applied to restore its crystal-clear appearance while preserving its aromatic richness.
At 40 years, the Armagnac’s style is definitely apparent. The quality of the oak used is very important, as the right use of a quality barrel will bring complexity and finesse to the Armagnac; elements that can be judged and appreciated after 40 years in contact with the wood.
It is produced by the Distillerie Merlet & Fils with AMÉRISSE, who wanted to sublimate this fruit by combining it with several bitter plants such as gentian, angelica, mugwort and rhubarb to reinforce its natural astringency, and then with other berries and citrus fruits that increase its fruity flavours and complexity tenfold.
The Galerie Cuvée - Schuck One embodies the collaboration between the Longueteau distillery from Guadeloupe and urban artist Shuck One. A piece of the Galerie collection, this art and terroir rum combines the excellence of agricultural rum with contemporary artistic expression. Distilled in Sainte-Marie, on the lands of Capesterre Belle-Eau, this cuvée reflects the ancestral expertise of the Longueteau house. Blending tradition and modernity, this rum is a true ode to creativity and Guadeloupean heritage. The bottle, adorned with a work by Shuck One, celebrates the tropical forest of Basse-Terre and the island's cultural roots.
Chopin Rye Organic is made from a heritage rye variety called Dankowskie Ruben, sourced from a single local farm near our distillery. It is handcrafted in small batches, following traditional distillation techniques and strict requirements for eco-friendly processing, and is blended with natural spring water from our own well on the property. The spirit is then rested for six months to bring out its full flavor before bottling.
Produced from 100% French malted barley. Double distilled in the Charentais abysses of the Merlet distillery, then matured in association with new and old French oak barrels. The result is a delicious, round, fruity and floral whisky with spicy notes. "Coperies" means "harvest" in an ancient local French dialect.
