Foursquare Penultimus 57%
With Penultimus, Foursquare closes the Exceptional Cask Selection series, faithful to the precision and transparency that have made the distillery's reputation. This rum is crafted from a blend of distillates from pot and column stills, aged in Barbados, without additives, colorants, or chill filtration. For this edition, Richard Seale combined bourbon and Moscatel casks. The influence of the Moscatel brings an aromatic depth without making the rum too sweet or too heavy. The whole remains balanced and highlights the rum itself, rather than an excessive influence of the cask.
TASTING NOTES
NOSE Deep and elegant, marked by dark chocolate, black tea, and spices. Notes of dates, dried coconut, banana, and lemon zest bring a beautiful aromatic complexity.
PALATE Full and oily, with a generous texture. There are nuances of ripe fruits, pineapple, honeydew melon, delicate caramel, and dark chocolate.
FINISH Long and persistent, carried by a lemony freshness and a slight tension evoking green grape skin.
