The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.Aging: Six years minimum. In toasted 400 L oak barrels, 25% of which are new.

For their Merlet VSOP Cognac, Gilles and his sons selected and blended eaux-de-vie from different regions of the cognac appellation, to ensure consistent quality. The eaux-de-vie were aged for at least four years. Most of the Cognacs selected for this blend are from Fins Bois ‘crus’, famed for their fruitiness and their capacity to mature fast when barrel-aged.

Old Pulteney Flotilla 2012 is a Highlands whisky aged in ex-bourbon American oak casks. Over the years, the casks have gently absorbed all the sea breeze from the North of Scotland, giving the whisky its sweet and complex flavors and its coastal characteristics. It is not surprising that Old Pulteney is known as the "maritime malt".

Palo Cortado is the rarest style of Sherry that combines the dryness of Fino with the nutty and darker fruit characteristics of Oloroso. It develops when the ‘flor’ yeast layer naturally dies on a wine that was initially intended to become a Fino. Using puncheons and hogshead casks that previously held this exceptional Sherry, the spirit develops a beautifully layered character, with notes of ripe plums, dark mocha and warming cinnamon spice.
