Glendalough Peated Pot Still is a bold fusion between Irish whiskey tradition and innovation, redefining the Pot Still style. It is made from malted and unmalted barley, distilled in traditional copper pot stills, and aged for over seven years. The introduction of peated malt, smoked during drying, adds a bold twist, blending delicate smoke with the characteristic spices and creamy texture of Pot Still whiskey. Crafted and bottled at 46% ABV, it begins its maturation in ex-bourbon American oak casks. It then spends an additional four years in virgin oak casks. This long aging process imparts notes of toasted oak, rich vanilla, and warm spices, perfectly balanced by a subtle peated smoke. A very special edition, available for a limited time only.
TASTING NOTES
NOSE: Delicate earthy peat smoke intertwined with honeyed malt, green apple, clove, and hints of citrus and toasted oak.
PALATE : Creamy and full-bodied, with baked apple, warming spice, almond, and a subtle smokiness that adds depth.
FINISH : Ginger spice, a touch of almond and earthiness.

Etsu Pacific Ocean Water Gin is distilled at the Asahikawa distillery in Hokkaido, the second largest of the four main islands of the archipelago, but the second least populated. Spring water from the mountain and seawater from the Pacific Ocean are added to carefully selected botanicals, such as juniper berries, bitter orange peel, liquorice root, angelica and coriander to produce this unique gin, which captures the Japanese coastline in a bottle.

It is finished in premium first fill Oloroso casks from Montilla, a small town found in the rolling hills of the Spanish countryside. We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land. It is encapsulated in the liquid when we put our Irish whiskey in these slow toasted Spanish casks for aging.
