Xibal Gin is a drink distilled through a copper alembic, in the presence of natural botanicals such as juniper roots, pericón, fennel, coriander, and spices such as black pepper, lemon, laurel, cardamomo, pericon and orange. This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.
