As the spirit warms in the mouth, delicate floral notes are liberated from the bergamot and coriander. Mid-palate, there is a pepper-like warmth from the emerging cardamom and juniper. • FinaleAs the cardamom continues to bloom across the palate mint-like components further emerge. The cassia and other warm spice notes become prominent on the finish. The cassia in particular lingers, encouraging another sip.

Geraldine Kavanagh, our full time forager, brings the wild, fresh botanicals to the distillery within hours of foraging where small-batch slow-distillation is used to tease out the delicate botanical flavours. Glendalough Wild Botanical Irish Gin serves the taste of 'a year in every bottle' and perfectly captures a place in time, with four seasons of foraging in wild Wicklow encapsulated in each bottle.

Nordés is produced slowly and with great care. Inspired by Venice’s 500+ year rich spice trade history and the Italian love affair with cascarilla bark used to create highly aromatic tonics, bitters and vermouths. This is a bold, savoury-led spiced London Dry gin with balanced bitter notes and mixes perfectly with sweet vermouth and Campari to create a spiced twist on a classic Negroni cocktail. While cascarilla bark is not native to Europe, it is present in any bitter liqueurs in the south of the continent and adds an aromatic and fragrant twist to OPIHR’s flavour profile.
