Tasting Notes:
Color: Clear Nose: Surprisingly funky and herbal, a chamomile lawn with marjoram, thyme, banana mint, sorrel, freshly cut grass, clay, lemons, pistachio ice cream, croissants, salted butter, and hairspray.
Palate: A dirty farm funk with grass, wake, brick dust, a slight herbal smoke, rye, prickly pear cactus jam, gooseberries, cherries, honey, and smoked duck with cranberry sauce.
Finish: Olive oil infused with sage, thyme, and marjoram.
Tasting Tip: Neat, with 20 minutes of aeration
