Chopin Rye Organic is made from a heritage rye variety called Dankowskie Ruben, sourced from a single local farm near our distillery. It is handcrafted in small batches, following traditional distillation techniques and strict requirements for eco-friendly processing, and is blended with natural spring water from our own well on the property. The spirit is then rested for six months to bring out its full flavor before bottling.

Lune d’Abricot is the rebirth of a traditional liqueur, Apricot Brandy. The Merlet family has selected several varieties of apricots from partner producers in Roussillon, leveraging their status and expertise as blackcurrant growers and winemakers to select fruits at optimal ripeness.
Etsu Pacific Ocean Water Gin is distilled at the Asahikawa distillery in Hokkaido, the second largest of the four main islands of the archipelago, but the second least populated. Spring water from the mountain and seawater from the Pacific Ocean are added to carefully selected botanicals, such as juniper berries, bitter orange peel, liquorice root, angelica and coriander to produce this unique gin, which captures the Japanese coastline in a bottle.
Maguey tobala (Agave potatorum) grows wildly at high altitudes and it is often cultivated as well. Its relatively minuscule size yields extremely limited quantities of intensely aromatic mezcal. Due to its tiny size and long growing period (12-15 years), Maguey tobalá is becoming increasingly rare in some regions. Unlike most other maguey, tobala does not produce hijuelos, which are the shoots or pups that sprout around the main plant once it has matured. For this reason, tobala can only grow from seed.
