TASTING NOTES
COLOR Amber with gold highlights.
NOSE Hints of rich dark chocolate with spicy notes of raisins, zesty citrus fruits and vanilla.
PALATE On the palate there are notes of oranges, toffee, vanilla and leather, all wrapped together with a gentle spice. The long lasting finish has a warming spice which is sweet and creamy.

Xibal Gin is a drink distilled through a copper alembic, in the presence of natural botanicals such as juniper roots, pericón, fennel, coriander, and spices such as black pepper, lemon, laurel, cardamomo, pericon and orange. Mermaid Zest Gin is an aromatic, tangy infusion of Mermaid Gin with summer citrus and wild coastal forages. Cascading grapefruit and hops are blended with island bergamot, lemon zest and rosemary, 'the dew of the sea', then distilled and infused with the signature gin. The result is a zesty, fresh spirit with a hint of sea air.
Aged in 1st-fill ex-bourbon casks, then for a time in 500-litre Spanish Sherry casks, which give it its hazelnut-brown color.
The Cask Strength Edition is Tomatin's most vivacious expression, yet still retains Tomatin’s characteristically rich and sweet undertones. Matured in a classic combination of first fill ex-Bourbon and ex-Oloroso Sherry casks.
Our malt is crafted slowly and is matured at the distillery in traditional dunnage warehouses on earthen floors. We're proud of our heritage and have used traditional methods since we rolled our first barrels back in 1790. And yet we're not afraid to tinker with tradition if it serves to improve our product.
