

The rum is aged using the solera process for aging spirits, in which barrels containing older spirits are “topped off” and married with younger spirit from other barrels as the angel’s share takes its toll. Afterwards the rums blended are aged again in Single Malt Scotch Whisky oak barrels for at least 6 months. By the time, the rum is bottled.
TASTING NOTES:
NOSE: Clean aroma of oak-aged runoff, aromatic notes of roasted malt, proper balance between components, aromatic cane and malted barley, very well aged.
PALATE: Slightly sweet malt taste, balanced and smooth, stays honest, well-evolved, taste of well-transformed wood and well-integrated with the roasted malt, and cane eaux-de-vie. Noticeable taste of vanilla, sweet almonds, and raisins.

100% black cane, a variety exclusive to the Bologne distillery. This old variety, now forgotten by distillers because of its low yield, is favoured by Bologne for its exceptional aromatic potential. It expresses a "concentrate" of cane. Matured for 12 months in stainless steel vats.
