Distilled in former Caperdonich Pot stills from 1898, it matures in 1st fill Bourbon casks made of American white oak (Quercus alba). Committed to sustainable and fair trade farming, this unpeated expression boasts a natural hue, free from artificial coloring. With an unwavering dedication to authenticity, the whisky undergoes no chill filtering and is expertly bottled at the distillery, ensuring a genuine reflection of its craftsmanship and origin.

Cihuatan Xaman, hailing from El Paisnal, San Salvador, El Salvador, is a 16-year-old rum with 40% Alc./Vol., aged for 15 years in American Oak ex-Bourbon barrels, then finished in Mayan ceiba barrels for 1 year.

In the heart of every bottle of Cihuatán Xaman lies the Sleeping Woman,Mayan goddess and guardian of the Cihuatán valley.
Legend has it that under the veil of night, the Sleeping Woman would look for the brightest star in the sky. This was Xaman,god of the North Star.

To blend this special batch, Francis Abécassis and Frédéric David the Cellar Master, have selected eaux-de-vie renowned for their rich aromas, aged in the estate’s oldest casks. Each sip of this precious cognac reveals harmonious and powerful flavours, symbolised by the strength of the dragon.

Indian Summer contains the precious spice saffron, which brings a warm, rich aromatic flavour and golden-yellow hue to our gin, reminiscent of a sizzling summer’s day.

Our clean, flavoursome gin contains carefully selected aromatic and diverse botanicals; angelica bark, almonds, coriander seed, cassia, juniper berries, lemon peel, liquorice root, saffron, orris root and orange peel.
