Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit. The oak itself was previously influenced by the grape variety and terroir of the winery from which we sourced these barriques; thus, the wood adds distinctive layers of complexity, depth and charm.

This mahogany malt obtains its spicy, treacly flavours from maturation in hogsheads made of Spanish Oak (Quercus Robur). This particular wood was sourced from the regions of Galicia and Asturias, specifically from the forests of the Cantabrian Mountains, which have a cool, humid climate. The oak was air dried for around 18 months and then toasted and charred to a medium level, opening up the oak to allow our complex spirit to extract its cask character. The secondary ageing in these virgin casks deepened the mahogany hue of the whisky and created a palate rich with dried fruits, maraschino cherries and hints of stem ginger.

These French oak barrels were sourced from one of the five Premier Cru Classé châteaux located in the Bordeaux wine region of France, which is globally renowned.

To create the GlenAllachie Wine Cask series, master blender Billy Walker first matured the spirit in the finest American oak ex-Bourbon barrels, before transferring the whisky into hand-selected European wine casks for secondary aging.
Billy added a distinctive touch to this edition by blending four exceptional wine cask finishes into one unique expression: The Cuvée Wine Cask Finish.
The 9-year-old Cuvée is a marriage of spirits from several fine wine barrels originating from the world-renowned regions of Bordeaux, Languedoc, and Valpolicella.

The GlenAllachie Wine Cask Finish series is a tribute to the art of aging and the expertise of master blender Billy Walker. For this 2023 edition, the whisky, first matured in American oak ex-bourbon casks, underwent a second aging in meticulously selected European wine barrels. This special edition, named "The Cuvée Wine Cask Finish," is an elegant and complex blend of four finishes from prestigious wine regions: the French AOCs of Languedoc and Médoc, as well as the Italian Grattamacco and Recioto della Valpolicella barrels. This rare single malt offers a unique aromatic richness, combining red fruits, delicate spices, and bursts of citrus for a sensory experience full of character.

This gorgeous golden malt has been bottled at 48% and matured in premium American Oak Wood Barrels before being re-racked into bold and punchy Kentucky Rye Casks. The different toasting and charring levels of these casks combined with the Rye maturation adds a rich and spicy twist to the classic GlenAllachie style. Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. The Meikle Tòir – The Chinquapin One is a peated single malt, carefully crafted and refined in virgin Chinquapin oak casks sourced from the Northern Ozarks, USA. This whisky delivers notes of soft spices and roasted nuts, harmoniously combined with a gentler peaty smoke, derived from the St. Fergus mainland peat. With an extended fermentation of 160 hours and a smoke profile measured at 35 PPM, this single malt reveals a complexity that perfectly complements maturation in virgin oak casks.

This limited edition pays tribute to the White Heather brand, passionately and meticulously revived in 2021. This premium whisky results from a rigorous selection of the finest single malts from the Speyside, Highlands, and Islay regions, combined with carefully chosen grain whiskies. With a meticulous aging process, it includes an initial maturation of 18 years in American oak and sherry casks, followed by a second maturation of three years in Pedro Ximénez, Oloroso, and Appalachian virgin oak casks.
