Cihuatan Xaman, originating from El Paisnal, San Salvador, El Salvador, is a 16-year-old rum with 40% Alc./Vol., aged for 15 years in American oak ex-Bourbon barrels, then finished for 1 year in Mayan ceiba casks. At the heart of every bottle of Cihuatán Xaman lies the Sleeping Woman, a Mayan goddess and guardian of the Cihuatán valley. Legend has it that, under the veil of the night, the Sleeping Woman would search for the brightest star in the sky. It was Xaman, the god of the North Star.

The Crème de Pêche de Vigne Merlet is made from this very particular variety, once cultivated along the vineyards, small in size and with red and white flesh.

The terrior of ABK6 is a chalky hilltop at 154m of altitude. For this spirit 100% Ugni-blanc grapes were used. The vinification took place in thermoregulated vats. The distillation was a double distillation in small charentals pot-stills. This Cognac is aged in new and old French Limousin oak barrels of 350 liters.

Mermaid Zest Gin is an aromatic and tangy infusion of Mermaid Gin with summer citrus and wild foraged coastal plants. Grapefruit and cascade hops are blended with island bergamot, lemon zest and rosemary, "the dew of the sea", then distilled and infused with the signature gin. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside. Glendalough choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging. These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.
