YuGin is a unique craft gin, made in France with an inspiration deeply rooted in Japanese traditions and heritage. Designed following the Wabi Sabi philosophy, which values simplicity and authenticity, YuGin distinguishes itself by a minimalist approach where each ingredient is carefully selected to offer a perfect balance. This gin embodies both freshness and complexity, while remaining faithful to the purity of natural flavors. YuGin is a delicate alliance of natural ingredients, notably yuzu, Sichuan pepper, coriander, and juniper.

For their Merlet VSOP Cognac, Gilles and his sons selected and blended eaux-de-vie from different regions of the cognac appellation, to ensure consistent quality. The eaux-de-vie were aged for at least four years. Most of the Cognacs selected for this blend are from Fins Bois ‘crus’, famed for their fruitiness and their capacity to mature fast when barrel-aged.

To make this extraordinary gin, Glendalough forage wild botanicals in the Wicklow mountains all year round. Geraldine Kavanagh, our full time forager, brings the wild, fresh botanicals to the distillery within hours of foraging where small-batch slow-distillation is used to tease out the delicate botanical flavours. Glendalough Wild Botanical Irish Gin serves the taste of 'a year in every bottle' and perfectly captures a place in time, with four seasons of foraging in wild Wicklow encapsulated in each bottle.

A very well-loved distillery, producing stunning peated expressions, and in recent years have been experimenting with unpeated malt too. Rum Cañero Sherry Cream Cask Finish is produced following the centenary recipes from the Dominican rums that the laureate General Máximo Gómez used to relish during his campaigns in the independency war of Cuba merged with the exclusivity double aged system of these rums with Sherry barrels which provides to CAÑERO a unique sweetness and complexity.
