TASTING NOTES
NOSE: Gourmet and generous, a subtle harmony of mirabelle tart and candied lemon aromas, complemented by a delicate touch of confectionery.
PALATE: A lively attack asserting its character between roundness and power. Fresh vanilla aromas are enhanced by a light and well-balanced woodiness. Subtle and elegant, the delicate aromas evolve towards soft spices such as cinnamon, intertwined with floral notes.

It is obtained through the bain-marie distillation of Amarone pomace (Corvina, Rondinella, Molinara) in a discontinuous still, then aged in small 500-liter oak barrels for a period of at least 36 months, during which the master distiller closely monitors the evolution of the blend, checking the fragrances and aromas to achieve optimal balance.

La Fée Parisienne is made according to a 19th-century recipe using nine different herbs, including grand wormwood, fennel, lemon balm, aniseed, mint and coriander.
The rum is aged using the solera process for aging spirits, in which barrels containing older spirits are “topped off” and married with younger spirit from other barrels as the angel’s share takes its toll. Afterwards the rums blended are aged again in Single Malt Scotch Whisky oak barrels for at least 6 months. By the time, the rum is bottled.
