This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.

The Finlaggan Sherry Finished is an iconic peated single malt, distilled on the legendary island of Islay. This whisky stands out for its double maturation: first aged in traditional casks, it gains additional depth through a sherry cask finish. Glendalough's Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside. Glendalough choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging. These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.

100% black cane, a variety exclusive to the Bologne distillery. This old variety, now forgotten by distillers because of its low yield, is favoured by Bologne for its exceptional aromatic potential. It expresses a "concentrate" of cane. Matured for 12 months in stainless steel vats.
