TASTING NOTES:
NOSE: Enchanting aromas of dark chocolate, molasses, and heather honey, accompanied by cinnamon, espresso, and candied raisins. The aromatic profile is intense and complex, with a depth reminiscent of an incomparable sherry, marked by notes of dried peach, plums, figs, and a hint of tobacco in the empty glass.
PALATE: On the palate, there is a perfect continuation of the nose, with a dense and thick texture. The power of sweet sherry manifests in a harmonious ensemble of figs, dried peaches, plums, sweet dark chocolate, cream liqueur, with a slight touch of eucalyptus and a wave of grape acidity. Sweetness is omnipresent, enriched by nuances of sweet caramel and plum jam.
FINISH: The finish is spicy, astringent, and woody, offering an exceptional length that lingers with confidence. It is marked by persistent sweetness and a slightly sticky character, perfectly balanced by woody notes.

Glendalough Peated Pot Still is a bold fusion between Irish whiskey tradition and innovation, redefining the Pot Still style. It is made from malted and unmalted barley, distilled in traditional copper pot stills, and aged for over seven years. The introduction of peated malt, smoked during drying, adds a bold twist, blending delicate smoke with the characteristic spices and creamy texture of Pot Still whiskey. Crafted and bottled at 46% ABV, it begins its maturation in ex-bourbon American oak casks. It then spends an additional four years in virgin oak casks. Etsu Double Orange has been macerated for seven days using traditional botanicals such as orange zest, juniper berries, licorice root, angelica and coriander. After maceration, only the gin is distilled without the botanicals, allowing the oils to infuse. Only after the distillation process is fresh mountain spring water added, giving this gin its fresh taste
Glendalough's Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside. Glendalough choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging. These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.
