Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit. The oak itself was previously influenced by the grape variety and terroir of the winery from which we sourced these barriques; thus, the wood adds distinctive layers of complexity, depth and charm.

NOSE: Notes of dark chocolate, caramel, heather honey, blackcurrant, caramelized brown sugar, and cinnamon spices.
PALATE: Waves of ripe red berries, grapefruit, and toasted honeycomb, followed by butter caramel, sweet fruits, and black truffle.

The GlenAllachie Wine Cask Finish series is a tribute to the art of aging and the expertise of master blender Billy Walker. For this 2023 edition, the whisky, first matured in American oak ex-bourbon casks, underwent a second aging in meticulously selected European wine barrels. This special edition, named "The Cuvée Wine Cask Finish," is an elegant and complex blend of four finishes from prestigious wine regions: the French AOCs of Languedoc and Médoc, as well as the Italian Grattamacco and Recioto della Valpolicella barrels. This rare single malt offers a unique aromatic richness, combining red fruits, delicate spices, and bursts of citrus for a sensory experience full of character.

This collection explores the dynamic relationship between virgin oak casks and sherry casks, offering a fresh perspective on whisky maturation. Each edition of the Sinteis Series is based on a double maturation: an unusual virgin oak cask combined with a classic sherry cask. The result? A harmonious fusion of contrasts, blending boldness with authenticity to deliver an unforgettable experience.
This mahogany malt obtains its spicy, treacly flavours from maturation in hogsheads made of Spanish Oak (Quercus Robur). This particular wood was sourced from the regions of Galicia and Asturias, specifically from the forests of the Cantabrian Mountains, which have a cool, humid climate. The oak was air dried for around 18 months and then toasted and charred to a medium level, opening up the oak to allow our complex spirit to extract its cask character. The secondary ageing in these virgin casks deepened the mahogany hue of the whisky and created a palate rich with dried fruits, maraschino cherries and hints of stem ginger.

The result is a well-balanced, yet complex malt with distinctive notes of dark fruits and layers of warming sweet spice.
