The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.Aging: Six years minimum. In toasted 400 L oak barrels, 25% of which are new.
Following on from the multi-award-winning success of our Brecon Special Reserve Gin and our Brecon Botanicals Gin, Penderyn are delighted to announce the launch of Rose Petal gin. It is based on our Brecon Special Reserve gin (which won Gold at the 2020 Spirits Business Global Gin Masters) and bottled at 37.5% abv.
The terrior of ABK6 is a chalky hilltop at 154m of altitude. For this spirit 100% Ugni-blanc grapes are used. The vinification took place in thermoregulated vats. The distillation was a double distillation in small charentals pot-stills. This Cognac is aged in new and old French Limousin oak barrels of 350 liters.

This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.
