The terrior of ABK6 is a chalky hilltop at 154m of altitude. For this spirits 100% Ugni-blanc grapes are used. The vinification took place in thermoregulated vats. The distillation was a double distillation in small Charentals pot-stills. This Cognac is aged in new and old french Limousin oak barrels of 350-liters, with a finish in XO barrels.
This superb Speyburn was aged in American and Spanish oak casks for 18 years before being bottled at 46% ABV. This bottling is dedicated to Speyburn's distillery manager, Bobby Anderson, as by happy coincidence 2018 is his 18th year at the distillery.
Glendalough's Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside. Glendalough choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging. These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.
In order to create this attractive presentation, the carafe is suspended in the spring from the branches of the apple tree as soon as the first little apples appear. The apple then grows inside the carafe. When the fruit becomes ripe, the carafe is removed from the tree with its apple held captive inside it.
The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.
Aging: Two years minimum. In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new.
