To create the GlenAllachie Wine Cask series, master blender Billy Walker first matured the spirit in the finest American oak ex-Bourbon barrels, before transferring the whisky into hand-selected European wine casks for secondary aging.
Billy added a distinctive touch to this edition by blending four exceptional wine cask finishes into one unique expression: The Cuvée Wine Cask Finish.
The 9-year-old Cuvée is a marriage of spirits from several fine wine barrels originating from the world-renowned regions of Bordeaux, Languedoc, and Valpolicella.

The GlenAllachie Wine Cask Finish series is a tribute to the art of aging and the expertise of master blender Billy Walker. For this 2023 edition, the whisky, first matured in American oak ex-bourbon casks, underwent a second aging in meticulously selected European wine barrels. This special edition, named "The Cuvée Wine Cask Finish," is an elegant and complex blend of four finishes from prestigious wine regions: the French AOCs of Languedoc and Médoc, as well as the Italian Grattamacco and Recioto della Valpolicella barrels. This rare single malt offers a unique aromatic richness, combining red fruits, delicate spices, and bursts of citrus for a sensory experience full of character.

Crafted with meticulous precision, Master Distiller Billy Walker carefully selected four exceptional cask types from an enviable inventory to be bottled as The GlenAllachie 1990, 35-year-old Cask Strength: Mizunara virgin oak, American virgin oak, Oloroso Sherry, and Pedro Ximénez Sherry. This single malt showcases the rare use of Mizunara virgin oak, a prized Japanese wood sourced from 200-year-old trees. By harmonising Mizunara with three iconic and timehonoured cask types, this masterful malt creates a symphony of flavours, balancing warm spice, luscious dried fruit, creamy vanilla, and rich molasses into a refined and full-bodied expression.

This gorgeous golden malt has been bottled at 48% and matured in premium American Oak Wood Barrels before being re-racked into bold and punchy Kentucky Rye Casks. The different toasting and charring levels of these casks combined with the Rye maturation adds a rich and spicy twist to the classic GlenAllachie style. Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. This process allows us to find some hidden gems: casks that are developing rather special and distinctive characteristics. These unique whiskies merit being showcased individually so as to capture the interesting nuances and unique personality delivered by the cask's DNA: its history, oak genus and provenance. The Meikle Tòir – The Chinquapin One is a peated single malt, carefully crafted and refined in virgin Chinquapin oak casks sourced from the Northern Ozarks, USA. This whisky delivers notes of soft spices and roasted nuts, harmoniously combined with a gentler peaty smoke, derived from the St. Fergus mainland peat. With an extended fermentation of 160 hours and a smoke profile measured at 35 PPM, this single malt reveals a complexity that perfectly complements maturation in virgin oak casks.
