With Penultimus, Foursquare closes the Exceptional Cask Selection series, faithful to the precision and transparency that have made the distillery's reputation. This rum is crafted from a blend of distillates from pot and column stills, aged in Barbados, without additives, colorants, or chill filtration. For this edition, Richard Seale combined bourbon and Moscatel casks. The influence of the Moscatel brings an aromatic depth without making the rum too sweet or too heavy. The whole remains balanced and highlights the rum itself, rather than an excessive influence of the cask.

Crafted with precision, the 3-5 year rare dark rum blend speaks the truth as a Caribbean rum, remaining uncompromised. Occasionally, we discover hidden gems that develop particularly distinctive character shaped by their oak, history, and provenance.Crafted with mainland peat sourced from St Fergus, this whisky is bottled for the Master Blender's European Selection. Matured in a single Bourbon Barrel, this whisky delivers layers of grilled honeycomb, orange spice and vanilla pods, unfolding into black cherry jam, grilled orchard fruits and campfire smoke.

Rum & Cane Central America XO is an extra old (XO) rum resulting from a meticulous blend of rums from Nicaragua and Guatemala. Aged in bourbon barrels for at least six years, this column-distilled rum captures the pure essence of its terroir. It is bottled at its peak to offer a rich and smooth tasting experience, ideal for refined palates. Rum & Cane Central America XO is a celebration of the English tradition of molasses rum and a true delight for spirit enthusiasts.

TASTING NOTES: NOSE: Intense and complex. Notes of green apples, toffee, spices. Slightly iodized. PALATE: Both round and smooth, it evolves on citrus fruits and then honey. The texture is creamy and delicate. FINISH: Creamy and saline, the finish lingers on pastry notes and a hint of mild spices.

It is produced by the Distillerie Merlet & Fils with AMÉRISSE, who wanted to sublimate this fruit by combining it with several bitter plants such as gentian, angelica, mugwort and rhubarb to reinforce its natural astringency, and then with other berries and citrus fruits that increase its fruity flavours and complexity tenfold.

The concluding installment in the "Five Virtues series" is dedicated to Water, paying homage to the five elements—Wood, Fire, Earth, Metal, and Water—integral in crafting the whisky. This edition is a tribute to Tomatin's exclusive spring, the Alt-na-Frith Burn, a constant water source. The whisky undergoes maturation, with half in sherry hogheads casks and the remaining half in second-fill bourbon barrels. Limited to just 6,000 bottles, this series is a testament to craftsmanship and nature's influence.
