The result is a remarkably refined liqueur that is both fruity and slightly sweet. It is best enjoyed chilled, on ice, and its richness also lends itself to coffee and cocktails. You can also serve it on its own as the perfect conclusion to an excellent meal. Sortilège is crafted from an original recipe by the descendants of Quebec's first settlers, who brought the whisky-making techniques of the New World and added a local native ingredient, maple syrup, to create a truly unique spirit.

The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.
Aging: Two years minimum. In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new.
