Don Papa Gayuma

With Penultimus, Foursquare closes the Exceptional Cask Selection series, faithful to the precision and transparency that have made the distillery's reputation. This rum is crafted from a blend of distillates from pot and column stills, aged in Barbados, without additives, colorants, or chill filtration. For this edition, Richard Seale combined bourbon and Moscatel casks. The influence of the Moscatel brings an aromatic depth without making the rum too sweet or too heavy. The whole remains balanced and highlights the rum itself, rather than an excessive influence of the cask.

The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.
Aging: Two years minimum. In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new.

TASTING NOTES

COLOR Bright, transparent liquid with luminous sparkles in a soft coral tone.

NOSE Predominant notes of juniper, followed by notes that evoke the juiciness of guava, mixed with fresh notes of cardamom, and combined with a mixture of citrus notes and, at the end, herbal notes characteristic of Mesoamerica such as pericon.

PALATE In the mouth, this product allows you to enjoy a complex flavor of juniper notes, followed by fruity notes of guava and citrus.

Today, Rebel Yell is made under license at Heaven Hill, one of Kentucky's oldest distilleries, still using the original recipe that earned it a double gold medal at the San Francisco World Spirits Competition in 2011.

Xila Extra Spicy is a handcrafted Mexican liqueur made from young espadín mezcal and infused with a blend of 7 Mexican chili peppers, ataulfo mango, tamarind, and orange peel, sweetened with piloncillo. The profile is characterized by a restrained fruity attack, a spicy and herbal heart, and a distinctly spicy, lingering finish. At 20% ABV, Xila Extra Spicy maintains a structured and defined profile, crafted for cocktails, particularly in serves where spiciness takes center stage. Ideal for cocktails such as spicy margaritas, Paloma variations, or contemporary twists on bold classic cocktails. Xila is crafted by Flor de Luna, the first women-led craft and experimental distillery in Mexico City.

Many years ago, they filled new make Finlaggan into Rioja Red Wine Hogsheads. Coming from the Rioja region within the Basque country of Spain, these Hogsheads have given the signature heavily peated Finlaggan an extra layer of rich mouth coating red berried fruit flavours. The result is a truly mouthwatering sweet and smoky dram to savour. The extrac-tion from the oak casks has given this whisky a beautifully rich natural coppery rose gold colour.
