This rare and unique Single Cask, drawn from cask #803475, comes from an Oloroso Puncheon and was aged for 10 years in the GlenAllachie distillery warehouses. Each cask is monitored with meticulous attention to capture and enhance the essence of its contents at the time of bottling. Uncolored and non-chill filtered, this whisky thus preserves all its authenticity and natural complexity. This cask strength whisky at 62.2% ABV reveals the perfect marriage between the Sherry-soaked Spanish oak and the distillate. This type of whisky, bottled directly from the cask, offers a raw intensity and a richness of aromas and flavors that only undiluted spirits can reveal.
TASTING NOTES
NOSE: The nose is marked by a rich and warm complexity. It reveals aromas of dried red berries mixed with the indulgent sweetness of mocha and heather honey. Spicy notes of cinnamon and nutmeg bring a touch of warmth, while brighter accents of orange zest and maraschino cherries complete this complex and inviting bouquet.
PALATE : On the palate, the texture is voluptuous, almost velvety, despite the high alcohol content. Flavors gradually unfold, starting with cocoa and winter truffle, enriched by the indulgence of red velvet cake. In the mid-palate, lighter and sweeter hints of honeycomb and spiced orange balance the power. Finally, butter caramel and ginger subtly emerge, adding a complex and lasting final touch.
FINISH : The finish is long, warming, with a hint of toffee and residual notes of ginger that gently tingle the tongue, inviting another sip to rediscover its multiple facets. The balance between spices, dried fruits, and woody notes offers a remarkable persistence in the mouth.

This mahogany malt obtains its spicy, treacly flavours from maturation in hogsheads made of Spanish Oak (Quercus Robur). This particular wood was sourced from the regions of Galicia and Asturias, specifically from the forests of the Cantabrian Mountains, which have a cool, humid climate. The oak was air dried for around 18 months and then toasted and charred to a medium level, opening up the oak to allow our complex spirit to extract its cask character. The secondary ageing in these virgin casks deepened the mahogany hue of the whisky and created a palate rich with dried fruits, maraschino cherries and hints of stem ginger.
