Don Papa Rum is the spirit of Sugarlandia. A premium aged rum from the Philippines. Created on the fertile foothills of Mt. Kanlaon, where the finest sugarcane is milled to produce sweet, rich molasses. Don Papa is a tribute to Papa Isio, the real and charismatic leader from the island of Negros, Philippines. His legend was instrumental to the independence of the island during the Revolution of the 1890s. The figure of Don Papa is inspired by Papa Isio, though he is not the same person. Each striving to better the last, Batch 10 is a true illustration of the artistry and expertise that creates every drop of our liquid gold. To deliver our classically Sherried profile, Billy hand-selected Pedro Ximénez and Oloroso casks to be married with spirit maturing in red wine barriques and medium toast/medium char American virgin oak barrels. The result is a well-balanced, yet complex malt with distinctive notes of dark fruits and layers of warming sweet spice.

This whisky was distilled on on 26th March 2010 and aged in a single ex-PX Sherry cask #804032 for 13 years.

The GlenAllachie 10 Year Old Cask Strength Batch 11 is a vibrant and bold expression from the GlenAllachie distillery, located in the heart of Speyside.
Crafted under the expert guidance of Billy Walker, this multi-award-winning single malt stands out due to its meticulous maturation in a unique combination of Pedro Ximénez, Oloroso, red wine, and new oak casks.
The result is a whisky of intense character, bottled at its natural strength to offer an authentic and memorable tasting experience.
Sporting a deep chestnut color, this whisky will captivate both enthusiasts and professionals with its aromatic richness and gustatory complexity.

The Meikle Tòir – The Chinquapin One is a peated single malt, carefully crafted and refined in virgin Chinquapin oak casks sourced from the Northern Ozarks, USA. This whisky delivers notes of soft spices and roasted nuts, harmoniously combined with a gentler peaty smoke, derived from the St. Fergus mainland peat. With an extended fermentation of 160 hours and a smoke profile measured at 35 PPM, this single malt reveals a complexity that perfectly complements maturation in virgin oak casks.

Specially selected by Billy Walker, Limited Release: 2,600 cases, Matured in ex-Bourbon barrels with secondary maturation in Grattamacco barriques, Matured in Speyside, Non-chill filtered, No added colouring.
Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit. The oak itself was previously influenced by the grape variety and terroir of the winery from which we sourced these barriques; thus, the wood adds distinctive layers of complexity, depth and charm.

This mahogany malt obtains its spicy, treacly flavours from maturation in hogsheads made of Spanish Oak (Quercus Robur). This particular wood was sourced from the regions of Galicia and Asturias, specifically from the forests of the Cantabrian Mountains, which have a cool, humid climate. The oak was air dried for around 18 months and then toasted and charred to a medium level, opening up the oak to allow our complex spirit to extract its cask character. The secondary ageing in these virgin casks deepened the mahogany hue of the whisky and created a palate rich with dried fruits, maraschino cherries and hints of stem ginger.
