Aged in 1st-fill ex-bourbon casks, then for a time in 500-litre Spanish Sherry casks, which give it its hazelnut-brown color.

To make this extraordinary gin, Glendalough forage wild botanicals in the Wicklow mountains all year round. Geraldine Kavanagh, our full time forager, brings the wild, fresh botanicals to the distillery within hours of foraging where small-batch slow-distillation is used to tease out the delicate botanical flavours. Glendalough Wild Botanical Irish Gin serves the taste of 'a year in every bottle' and perfectly captures a place in time, with four seasons of foraging in wild Wicklow encapsulated in each bottle.

BARSOL Pisco is produced in the Bodega San Isidro. All grapes used for BARSOL Pisco are grown on proprietary premises surrounding the Bodega. The Bodega can rely upon nearly 100 years of experience in the production of high quality pisco.

L'Absinthe La Fée Parisienne is the most authentic expression of classic green absinthe.
Made from 100% natural ingredients, this absinthe is distilled according to a traditional 19th-century recipe.
The result is a superior absinthe of remarkable quality, both powerful and balanced, adhering to ancient techniques to capture the essence of great creative spirits like Van Gogh, Rimbaud, and Toulouse-Lautrec.
La Fée Parisienne is the first traditional absinthe distilled in France since the ban was lifted in 1915.

In 1881, the white version of vermouth was created in Savoie. Sweet and aromatic, our vermouth from Chambéry lends itself wonderfully to all delicacies, and remains the timeless symbol of supreme elegance.

Chopin Rye Organic is made from a heritage rye variety called Dankowskie Ruben, sourced from a single local farm near our distillery. It is handcrafted in small batches, following traditional distillation techniques and strict requirements for eco-friendly processing, and is blended with natural spring water from our own well on the property. The spirit is then rested for six months to bring out its full flavor before bottling.
