It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. With the country’s highest wine classification as a Denominação de Origem Controlada (DOC), this historic region is a significant producer of robust, characterful red wines.Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit.

The Meikle Tòir – The Chinquapin One is a peated single malt, carefully crafted and refined in virgin Chinquapin oak casks sourced from the Northern Ozarks, USA. This whisky delivers notes of soft spices and roasted nuts, harmoniously combined with a gentler peaty smoke, derived from the St. Fergus mainland peat. With an extended fermentation of 160 hours and a smoke profile measured at 35 PPM, this single malt reveals a complexity that perfectly complements maturation in virgin oak casks.

Uncolored and non-chill filtered, this whisky thus preserves all its authenticity and natural complexity. This cask strength whisky at 62.2% ABV reveals the perfect marriage between the Sherry-soaked Spanish oak and the distillate.
