GlenAllachie 9-Year-Old Amontillado Sherry Cask Finish is a Scottish single malt that embodies the art of aging in exceptional casks. Initially matured under the influence of Fino, this Amontillado is distinguished by a second maturation without the presence of the "flor" yeast layer, characteristic of oxidative aging. This unique process enriches the whisky with deep amber hues and intensely complex flavors. Using hogsheads that previously held this aged sherry, this single malt reveals a rich and nuanced aromatic profile. With notes of black cherries, roasted hazelnuts, and caramel sauce, this limited edition is part of "The Wood Collection," a series that highlights the interaction between wood and whisky.

Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. Xila Extra Spicy is a Mexican liqueur produced in an artisanal manner, crafted from young espadin mezcal and infused with a blend of 7 Mexican chilies, ataulfo mango, tamarind, and orange peel, sweetened with piloncillo. The profile is characterized by a restrained fruity attack, a spicy and herbaceous heart, and a distinctly spicy and persistent finish. With 20% alcohol, Xila Extra Spicy maintains a structured and defined profile, designed for cocktails, particularly in preparations where spiciness is the protagonist. Ideal for cocktails such as spicy margaritas, Paloma variations, or contemporary interpretations of classic cocktails with character. Xila is made by Flor de Luna, the first artisanal and experimental distillery in Mexico City led by women.

This rare and unique Single Cask, drawn from cask #803475, comes from an Oloroso Puncheon and was aged for 10 years in the GlenAllachie distillery warehouses. Each cask is monitored with meticulous attention to capture and enhance the essence of its contents at the time of bottling. Uncolored and non-chill filtered, this whisky thus preserves all its authenticity and natural complexity. This cask strength whisky at 62.2% ABV reveals the perfect marriage between the Sherry-soaked Spanish oak and the distillate. This type of whisky, bottled directly from the cask, offers a raw intensity and a richness of aromas and flavors that only undiluted spirits can reveal.
