Cihuatan 12 Years Cinabrio is an exceptional rum from El Salvador, carefully crafted from cane syrup and molasses.
Its name, "Cinabrio," is inspired by cinnabar, a red mineral used by the Mayans to honor their sun god, Kinich Ahau.
This rum has aged for at least 12 years in the cellars of Licorera Cihuatan, in American oak barrels that previously contained bourbon.
The rich history and artisanal production method of this rum make it a true celebration of Mayan culture and Salvadoran craftsmanship.

The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume and it is the second distillation, that of the "petite eau" which gives the Calvados.
Aging: Two years minimum. In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new.

TASTING NOTES : NOSE: The nose is marked by captivating notes of raisins and vanilla, opening up to nuances of cooked sugar and caramel. A dark and thick molasses unfolds, enriched by touches of black licorice and coffee grounds. Roasted and grilled nuts add extra depth. PALATE : On the palate, the rum first reveals flavors of candied fruits and flambéed banana. Its smooth and sweet texture evolves into aromas of caramel, vanilla, and lightly cooked honey. For their Merlet VSOP Cognac, Gilles and his sons selected and blended eaux-de-vie from different regions of the cognac appellation, to ensure consistent quality. The eaux-de-vie were aged for at least four years. Most of the Cognacs selected for this blend are from Fins Bois ‘crus’, famed for their fruitiness and their capacity to mature fast when barrel-aged.

Miracielo is produced by hand using the original La Antigua Guatemala recipe from 1953, in small batches.
During the ageing process, fresh plums, sultanas and vanilla are added by hand, macerating and giving it its unique aromatic profile. Symbolising its artisanal, hand-made profile, the leather collar that adorns its neck is also handmade.

Nordés is produced slowly and with great care. A careful selection of the best neutral alcohols, together with the use of white Albariño Galician grapes, are the indispensable base of our gin, giving Nordés its unmistakable fresh and soft character. The distilling process is enhanced with the maceration of 11 botanical elements.

Our malt is crafted slowly and is matured at the distillery in traditional dunnage warehouses on earthen floors. We're proud of our heritage and have used traditional methods since we rolled our first barrels back in 1790. And yet we're not afraid to tinker with tradition if it serves to improve our product.
