The GlenAllachie Wine Cask Finish series is a tribute to the art of aging and the expertise of master blender Billy Walker. For this 2023 edition, the whisky, first matured in American oak ex-bourbon casks, underwent a second aging in meticulously selected European wine barrels. This special edition, named "The Cuvée Wine Cask Finish," is an elegant and complex blend of four finishes from prestigious wine regions: the French AOCs of Languedoc and Médoc, as well as the Italian Grattamacco and Recioto della Valpolicella barrels. This rare single malt offers a unique aromatic richness, combining red fruits, delicate spices, and bursts of citrus for a sensory experience full of character.

This gorgeous golden malt has been bottled at 48% and matured in premium American Oak Wood Barrels before being re-racked into bold and punchy Kentucky Rye Casks. The different toasting and charring levels of these casks combined with the Rye maturation adds a rich and spicy twist to the classic GlenAllachie style. Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. With the country’s highest wine classification as a Denominação de Origem Controlada (DOC), this historic region is a significant producer of robust, characterful red wines.Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit.

The Meikle Tòir – The Chinquapin One is a peated single malt, carefully crafted and refined in virgin Chinquapin oak casks sourced from the Northern Ozarks, USA. This whisky delivers notes of soft spices and roasted nuts, harmoniously combined with a gentler peaty smoke, derived from the St. Fergus mainland peat. With an extended fermentation of 160 hours and a smoke profile measured at 35 PPM, this single malt reveals a complexity that perfectly complements maturation in virgin oak casks.

‘The Original’ is the classic single malt that truly champions our peated pursuit. Made with mainland peat from St. Fergus, the flavour contribution is sweeter than that anticipated of coastal peat.

Aged with expertise in high-quality Pedro Ximénez and Oloroso Sherry casks, the barrels have imparted rich and fruity notes that blend harmoniously with wisps of peaty smoke.

This rare and unique Single Cask, drawn from cask #803475, comes from an Oloroso Puncheon and was aged for 10 years in the GlenAllachie distillery warehouses. Each cask is monitored with meticulous attention to capture and enhance the essence of its contents at the time of bottling. Uncolored and non-chill filtered, this whisky thus preserves all its authenticity and natural complexity. This cask strength whisky at 62.2% ABV reveals the perfect marriage between the Sherry-soaked Spanish oak and the distillate. This type of whisky, bottled directly from the cask, offers a raw intensity and a richness of aromas and flavors that only undiluted spirits can reveal.
