Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in rich Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. With the country’s highest wine classification as a Denominação de Origem Controlada (DOC), this historic region is a significant producer of robust, characterful red wines.Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit.

The Meikle Tòir – The Chinquapin One is a peated single malt, carefully crafted and refined in virgin Chinquapin oak casks sourced from the Northern Ozarks, USA. This whisky delivers notes of soft spices and roasted nuts, harmoniously combined with a gentler peaty smoke, derived from the St. Fergus mainland peat. With an extended fermentation of 160 hours and a smoke profile measured at 35 PPM, this single malt reveals a complexity that perfectly complements maturation in virgin oak casks.

‘The Original’ is the classic single malt that truly champions our peated pursuit. Made with mainland peat from St. Fergus, the flavour contribution is sweeter than that anticipated of coastal peat.

Aged with expertise in high-quality Pedro Ximénez and Oloroso Sherry casks, the barrels have imparted rich and fruity notes that blend harmoniously with wisps of peaty smoke.

This rare and unique Single Cask, drawn from cask #803475, comes from an Oloroso Puncheon and was aged for 10 years in the GlenAllachie distillery warehouses. Each cask is monitored with meticulous attention to capture and enhance the essence of its contents at the time of bottling. Uncolored and non-chill filtered, this whisky thus preserves all its authenticity and natural complexity. This cask strength whisky at 62.2% ABV reveals the perfect marriage between the Sherry-soaked Spanish oak and the distillate. This type of whisky, bottled directly from the cask, offers a raw intensity and a richness of aromas and flavors that only undiluted spirits can reveal.

A genius whisky expression as we like to see and especially taste. The Glencadam Single Cask Whisky matured only on Cask 179 and could not be bottled pure. After maturing on a single cask not cooled filtered into the bottle without any coloring or dilution. Something that will really make the true bourbon lover water teeth. An incredibly fine dram with a divine taste. This Highland Glencadam was personally selected by Premium Spirits and released in a numbered edition. The cask was personally selected on site after a thorough analysis.

Glencadam Distillery opened in 1825, and, since then, little has changed and our award-winning Glencadam Highland Single Scotch Malt Whisky is still produced in the same fashion. Unchillfiltered and natural in colour.

This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan. The Mizunara barrels were custom-made for this project by skilled coopers in Japan. The exceptional combination of Irish whiskey in Japanese wood barrels makes it a very interesting whiskey.
