um Cañero Finished Cognac Cask is produced following the centenary recipes from the Dominican rums that the laureate General Máximo Gómez used to relish during his campaigns in the independency war of Cuba merged with the exclusivity double aged system of these rums with Cognac Oak barrels, which provides to CAÑERO a unique personality among worldwide rums. Rum CAÑERO Finished Cognac Cask is the result of a master formula in which participate alcohols aged for more than 10 years in the Caribbean, in Bourbon casks, combined with base rums with at least 7 years of ageing, and other spirits from our cellar. Tasting notes

Nose
Rich with dark fruit, cherry, raisin, fig and Christmas pudding. Floral notes with lemongrass, citrus and a touch of nutmeg.

Taste
Sweet and smooth, with butterscotch, honey and peppercorn, dried fruit, maraschino cherries and brown sugar.

Finish
Ginger spices a touch of almond and earthiness.

The newest release from Glendalough Distillery, our Single Grain Double Barrel Cask Strength Irish Whiskey. This liquid begins its maturation process in flame charred ex Bourbon American oak casks. It is finished in premium first fill Oloroso casks from Montilla, a small town found in the rolling hills of the Spanish countryside. We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land. It is encapsulated in the liquid when we put our Irish whiskey in these slow toasted Spanish casks for aging.

TASTING NOTES

COLOUR: Rich Mahogany

NOSE: Dark cherries, golden syrup and sweet spices to the fore, with hints of toffee, glazed figs and hazelnuts.

PALATE: Our heather honey hallmark, alongside orange peel, cocoa and ginger, with caramelised brown sugar on the finish.

Specially selected by Billy Walker, Limited Release: 2,600 cases, Matured in ex-Bourbon barrels with secondary maturation in Grattamacco barriques, Matured in Speyside, Non-chill filtered, No added colouring.
Factors such as the oak species, level of toasting, and coopering of the cask each leave a unique mark on the slumbering spirit. The oak itself was previously influenced by the grape variety and terroir of the winery from which we sourced these barriques; thus, the wood adds distinctive layers of complexity, depth and charm.
